So I spend a lot of my time at my current job thinking about what I am going to cook when I get off or what ways I can transform an old dish into a new one. See sometimes our passions choose us and although my work as medical support assistant is lovely, food is my love. Take this recipe for example. To be able to take bits and pieces from one meal this day and another meal from that day and make it into something not only edible but picture perfect makes my heart jump!
Ingredients:
2c Roasted chicken from page 21 of my cookbook
4c Steamed rice
2 cans Cream of chicken soup
1c Mixed vegetables
1c Chicken broth
1c Panko bread crumbs
2tbsp melted butter
Preheat oven to 375 degrees
In a bowl combine the chicken, rice, cream of chicken soup, broth and mixed vegetables. Stir until combined. Spoon mixture into an oven safe casserole dish. In a separate bowl mix the butter and the panko crumbs. Spread evenly over the rice mixture and bake for 30 minutes or until bread crumbs are golden brown.
